Mexican Casserole Recipe
1/2 c. dry rice
1 1/2 c. water
1 1/2 lb. ground beef.
1/4 c. onion
1/2 tsp. accent
1 can chopped green chiles
1 can cream of mushroom soup
1 can tomato soup
1 8 oz. jar salsa
1 small bag fritos corn chips
velveeta cheese

Begin by putting rice and water in small sauce pan. Bring to a boil. Cover and simmer on low for 20 minutes. While this is simmering. Brown the ground beef with the onion and accent. Drain the grease off, and add the chiles, tomato soup, and salsa. When rice is done, drain any excess water off, and add it to the hamburger mixture. Crush corn chips and pour into the bottom of a 9 x 13 pan until the bottom is covered. Pour meat & rice mixture over top and spread it out. Place velveeta slices over the top until its all covered. Bake at 375* until cheese is bubbling and casserole is warm through. (about 20 minutes)
